I have a Singer Prélude and I can’t seem to get a stitch through any knit fabrics. Is there any way I can sew knits with a regular sewing machine, without having to use a serger? I’m trying to make a simple swimsuit!

sorry but no!
Use a large basting stitch. If it’s really stretchy, use a zig-zag stitch.
Yes you can, provided you use a ball point machine needle and good quality polyester thread. Some 20 years ago I attended all the Knitwit sewing classes and made all kinds if clothing including lingerie and swimwear I would suggest you use two lines of stitching for increased security and slightly stretch the fabric as you sew the seam- this gives a bit of ease-carefully not to overstretch as this will make the seam pucker. As already suggested a fine width zigzag is also helpful to build in a bit of ease in the seam.- good luck
The problem is your needle. Use a ball pointed needle as small as possible. A ball pointed needle should not cut the yarns in the fabric as the needle penetrates the seam but shift the yarns to one side. This also requires a small diameter thread.
There’s more here:
Are you saying the needle does not catch the bobbin thread?
All needle types should penetrate swimwear fabric.
Can you stitch regular fabric and it is just the swimwear fabric that you cannot seam?
